The Culinary arts institutes ensure the Sous Chef (soo-chef). The Sous Chef takes charge of the Kitchen when the head chef is absent. Sous is French for "under" so the Sous Chef reports to the Head Chef / Executive Head Chef and is second in command.

The Sous Chef:

  • Is a managerial chef in the kitchen
  • Prepares and cooks meals and specialty foods
  • Supervises chefs, cooks and other kitchen staff
  • Demonstrates cooking techniques, recipes and equipment to the kitchen staff
  • Some plan menus and order food and kitchen supplies
  • Taking charge when the head chef is absent
  • Taking care of food purchasing and storage
  • Maintaining a safe and hygienic kitchen environment
  • Staff development and training.

A Sous Chef can expect to make 20k to 65k per annum. Again the salary is an emotive issue and many factors are considered when offering a salary for a sous chef job.
