Harbour Hotels is a group of luxury hotels based across the South of England who are currently recruiting to grow their unique Chef Academy with the next selection of Apprentice Chefs.

Responsibilities of the Apprentice Chef:

  • Gain experience across all areas of the kitchen to gain knowledge to complete Commis Chef Apprenticeship Standard
  • To use available resources to learn and develop sufficiently
  • Work as a team with the kitchen brigade to maintain the highest standards at all times
  • Ensure all mis-en-plas/food prep is completed in a timely and efficient manner
  • Attend Academy Training days once a week at our Christchurch Head Office
  • Learn and adhere to all HACCP & COSHH procedures*

Harbour Hotel Group is a collection of prestigious hotels nestled in some of the most stunning locations across the South of England.We have a variety of kitchens across the group from standalone seafood led restaurants run by a local celebrity Chef, Alex Aitkens, to bar offerings, wedding venues and our upper deck restaurants.

Our food standards across the group are high and you can be assured all restaurants create menus from the best local, seasonal produce available.Due to the nature of our restaurants, our trainee Chef programme offers unique and exciting environments to work and learn in, under the watchful guidance of our talented Head Chefs and teams.

As well as being based 4 days on site in our kitchens, once a week our apprentice chef academy operates from Head Office, whereby you spend the day with other apprentices brushing up and refining the skills you need to cover for the apprenticeship. These include, 6 workshops a year, ranging from butchery to pastry, as well as being involved in a variety of day trips to markets, sea fishing and off site masterclasses.

Later in the year, your time will also be spent in our (currently being designed) state of the art chef academy kitchen, where you will have the opportunity to further refine your skills and be encouraged to create and designing dishes for yourself as well as menus for our pop-up restaurants.

Salary & Hours: £6 per hour – 40 hour contract

On successful completion of the apprenticeship, you’ll receive a nationally recognised qualification and have the opportunity to join one of the kitchen brigades across our group of hotels.
