The role:

  • Responsible for the recruitment of Senior kitchen management roles and recording their duties and core responsibilities.
  • Monitoring the kitchen management performance and compliance with H&S, Food Safety, cleanliness, standards, team morale and financial KPIs.
  • Carry out senior kitchen management appraisals and create a development plan for kitchen teams to progress and grow with the company.
  • Inspire and motivate the kitchen teams, putting workplace culture at the forefront of every decision you make.
  • Work closely with the site General Managers and Head Chefs to build positive relationships and a system of trust.
  • Promote the standards of the brand at all times and protect the reputation the business has tirelessly built.
  • Promote positive work place culture and through training and development ensure low staff turnover.
  • Ensure full standardisation of food offering and kitchen service delivery across the group through detailed recipe creation and regular training.
  • Full responsibility for food product quality control through an in-depth review process and customer feedback data collation.
  • Support systems manager in implementation of recipe creation in the company EPOS system to ensure stock control and reporting is 100% accurate.
  • Support the FD in delivering GP and Labour budgets for the BOH departments.
  • Monitoring site P&L and performance KPIs ensuring targets are both met and exceeded.
  • Supporting the Executive Chef in developing new products and the costing process to ascertain accurate yields and achieve target GPs.
  • Working with procurement to monitor purchasing and price changes. 
  • Upholding legal compliance and maintaining the company’s policies on Food Safety, H&S and Risk Assessments. 
  • Monitoring the cleanliness and structure of kitchens, ensuring the high standards of the company are met. Reporting into the Operations team and following corrective action through to completion.
  • Ensuring that all kitchen operations function in accordance with UK law and conform to requirements as documented by Food Standards Agency and Environmental Health Office.

  • Produce up to date allergen information documents in regards to all current menu items ensuring clear, accurate and complete information is available to the team and customers at all times. H&S Manager sign off will be required.
  • Be prepared to travel to each site on a regular basis.
  • Undertake various projects as and when requested by the Operations Director and Company Directors.
